Potato Pancakes
Potato pancakes are a great alternative to your ordinary side dishes. They are quick and very
easy to make, and with a little imagination, you can create many mouth watering versions. Depending on the style of
potato pancakes you are making for dinner you can even use leftover mashed potatoes from the night before.
If you want a creamy potato pancake, go ahead and use mashed potatoes for the recipe. If you
have some left over from a previous meal, just refrigerate them until you are ready to use them. Some people prefer
to serve a more chunky version. If you are one of those people, then you may want to also consider other additions
to your favorite potato pancake recipe.
Some people like them with just potatoes and onions, which is a great side dish.
But you can also add other flavors like garlic, or dried spices like oregano, dill, and parsley. It really does
depend on the mood of the people eating them.
If you really want to get creative with them, you may want to try adding ingredients such as
bacon bits, sour cream and cheese. Maybe some diced ham, or even tuna would be a delicious choice. Just follow the
regular recipe and add your optional ingredients as well.
Be careful not to add too much, though. It can make your potato pancakes dry, and possibly
harder to cook through. Try to judge how much of certain ingredients you will need in the size batch you are
making.
Depending on exactly what you put into your pancake batter, it can make a wonderful new side
dish, or a creative new meal on its own. They would be perfect for lunch or maybe even a serious breakfast if you
are planning to spend a long day in nature.
In addition to the normal ingredients in your potato pancakes, you can also create different
side dishes with toppings. Normally, people choose toppings like cheese, or ketchup. How about trying a topping of
sour cream and chives? Some people prefer to have sweet toppings like syrup or honey. Even applesauce has been a
known topping for these healthy pancakes. Have fun with your creations.
After all, some really wonderful foods and products start as simple ideas. Ideas that may seem
silly at first, but can become something excellent.
How about getting really creative and instead of your basic Idaho potato, use a sweet potato to make your pancakes.
They are a great alternative to the ordinary, and have a unique flavor.
Potato Pancake Recipe
Start with your basic potatoes. If you are making creamy pancakes, use about four cups of mashed potatoes.
Instant potatoes work beautifully but are a less healthy option. If you are going for the chunky version, then peel
approximately four pounds of fresh potatoes.
INGREDIENTS:
Potatoes (see above for amount needed)
1 small onion
2 cups dry pancake mix
1 teaspoon salt
2 beaten eggs
dash of pepper
2-3 teaspoons of canola oil

If you are making chunky pancakes, then you will
need to grate your potatoes in a food processor, along with the onion. Add them to a large
mixing bowl with the pancake mix, salt, eggs and pepper. Mix together to form
batter.
If you are adding any other ingredients to your
pancakes, now is the time to do so. If your batter is thick enough, you can pat out potato
patties, if it is thin, you can ladle it out like a typical pancake. Add the canola oil to
a frying pan or griddle set on medium heat.
Once the oil is hot, add your pancakes. Fry approximately 4 to 5 minutes
on each side. Top with what ever topping you desire, and enjoy!
