Grandma's Pancake Recipe
The sun is beginning to grace the windowpanes leaving its mark in a haze across your
kitchen floor. Yet another day begins with the urgency of never having anything new to eat.

Standing at the refrigerator, casting forlorn glances at the boxes of
cereal, who greet you with familiar adages such as, “Snap. Crackle. Pop.”
You can feel the inedibility of the boring familiar set in. Have no fear,
you do have another option - Grandma's homemade pancakes.
On an early morning, looking for something substantial and pleasing to
fill that gnawing in your stomach, answer its growls with a plate of hot, fluffy, healthy,
pancakes, made the traditional way.
Load it up with some delectable syrup; it will be our little secret. This
simple pancake recipe takes very little of your
time to fix.

To start with, we have a base recipe:
2 cups of Self Rising Flour or
Bisquick
1 or 2 Eggs depending on their size
4 tbsps of sugar
¼ cup of vegetable oil
Add Milk until it becomes the right texture and
consistency
Fresh Fruit (Optional)

Combine these in a large bowl, leaving the milk for last. When
cooking them you may either use a griddle (which is the best for novices) or
you may use a skillet.
My preferred option is a flat skillet.
When pouring your
pancake batter , do so
slowly, and keep them to a manageable size. Nothing is worse then not being able to
flip your pancake. Besides, the larger the pancake the more you risk not having it
done in the middle.
The recipe above yields approximately
20-25 pancakes. (It comes from a large family). You may adjust the amount by either
using more flour, more sugar, and more milk or vice versa.

If perhaps, you are looking for an alternative recipe with a twist try adding
some buckwheat. This is a healthy alternative to a morning classic. When doing so, the recipe
calls for 3 parts Buckwheat to 1 part flour or Bisquick. Then you simply follow the rest of
the recipe as described.

This recipe has become a family favorite and can be used for either breakfast or
dinner. It pairs up exceedingly well with other dishes. Pancakes, sausage, eggs, bacon,
biscuits, gravy, it is a meal fit for a king. If you wish to dress them up, pair them with
some fresh fruit in cream or yogurt. You mix fresh fruit with your mixture before cooking
them. Blueberries, strawberries, black berries, the list of choices go on as far as your
imagination will take it.
This can be a desirable addition to your morning rituals and the best part, if
you have kids, these lovely hot cakes will have just the right balance of nutrition and taste
to satisfy both of your palates.
